04 - Gently press a second cookie on top of each ice cream scoop to create a sandwich, applying light pressure to spread the filling evenly.
05 - Immediately roll the exposed ice cream edges of each sandwich in the sprinkles, pressing gently to ensure adherence.
06 - Return completed sandwiches to the baking tray and freeze for at least 1 hour until the ice cream is completely set.
07 - Serve directly from the freezer for best texture and consistency.
