03 - 4 oz sharp white cheddar cheese, shredded

→ Fruit

04 - 1 cup fresh blueberries

03 - Sprinkle shredded cheddar evenly over two slices (on top of cream cheese).
04 - Spoon the blueberry mixture evenly over the cheddar layer.
05 - Top with the remaining bread slices, cream cheese side down, to form sandwiches.
06 - Butter the outsides of each sandwich.
07 - Heat a large skillet over medium heat.

# Expert Advice:

01 -
  • The way hot blueberries burst against creamy cheese creates little pockets of sweet jam right in the sandwich
  • It takes five minutes longer than regular grilled cheese but tastes like something from a fancy brunch spot
02 -
  • Medium heat is lower than you think, too high and the bread burns before the cheese melts
  • Cream cheese must be truly soft or it will tear the bread when you try to spread it
03 -
  • Shred your own cheddar instead of buying pre shredded cheese for better melting
  • Room temperature ingredients melt more evenly and cook more consistently
